Lasagna Roll Ups.....by Kristin Johnson

Lasagna Roll Ups

Alfredo Sauce:
1 pint heavy cream • 2 Tablespoon cream cheese
1 teaspoon garlic powder • 1 stick of butter
...
1/2 - 3/4 cup Parmesan cheese


In saucepan, combine butter, cream & cream cheese. Simmer until it's all melted & mixed well.
Add Parmesan & garlic powder. Simmer for 15-20 minutes on low.


Now that you have that ready, let's make some lasagna roll-ups!


To make 6 roll-ups, I used:
8x8" glass pan
6 lasagna noodles
alfredo sauce
2-3 chicken tenderloins
Italian seasoning
Mozzarella, Parmesan or whatever cheese you like


Prep pan by spraying with a little bit of non-stick spray and pour some alfredo sauce in to just cover the bottom of the pan. Start cooking the chicken with a little bit of Italian seasoning, and it helps to start boiling a pan of water for noodles at the same time.


When chicken is done, cut into small (slightly smaller than bite-size) pieces and split into 6 piles. When the water is at a rolling boil, drop in noodles and cook for about 8-10 minutes (or until al dente). Drain and rinse with cold water to prevent them from sticking to each other. (*Very Important!*) Lay out the noodles on some wax paper & blot dry with a paper towel.


Spread a little bit of alfredo sauce over each noodle. (Don't put too much or it will make a bigger mess for you to clean up later.) Sprinkle a little bit of Italian seasoning. Take one of your little groups of chicken and try to spread them out evenly over the noodle. Add a little bit of cheese. To roll up, start at one end and roll the noodle over the toppings. They can be hard to handle if they weren't dried. You won't be able to roll them tight and will have to lift the noodle a little over the chicken, otherwise you will end up pushing all the toppings out the other side.


Place the roll-up in the pan, seam-side down so they don't come undone. Once they are all in the pan, pour some more alfredo sauce overtop & try to get in between the roll-ups so they won't stick together. Sprinkle a little Italian seasoning if you want, then add cheese on top. Then bake at 350 degrees for about 30 minutes, or until the cheese is completely melted on top.

Poppy Seed Chicken

Ingredients:

5 cups chicken breasts, cooked and cubed
1 cup sour cream
2 cans condensed cream of chicken soup
2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
1/2 cup melted butter
1 T poppy seeds


Additional Ingredients to make it fancy:
1 tsp Worchestire sauce
1 tsp celery salt
1 tsp minced garlic
1 T lemon juice
1/4 tsp pepper


Instructions:

Preheat oven to 350 degrees.
Boil raw chicken breasts with salt and pepper until done. I like to boil it with half an onion cut into large chunks to give it more flavor. Let chicken cool slightly and cut into one inch cubes. Place cubed chicken in a 9X13 casserole dish.


Stir together the condensed soup and sour cream. If you wish to add the additional flavorings stir in the worchestire, celery salt, garlic, lemon juice, and pepper to the soup and sour cream mixture. Pour over the chicken.

Non alcholic drinks.......by Margaret Peterson

Non-alcoholic of course so everyone can enjoy.
20 oz frozen raspberry in syrup
12 oz frozen lemonade cocentrate
46 oz pineapple juice
64 oz chilled 7-Up
Put the raspberries/syrup in blender with the lemonade. Whip until smooth, and strain before adding to punch bowl (seeds) Now add pineapple juice and 7-Up is to be added right before serving.

Dirt Cups.... Stormi Clonts

Dirt cups!!!

Clear plastic cups (any size you want, I use the smaller ones)
Chocolate pudding
Whipped cream

Oreos (crushed)
Gummy worms

Mix the chocolate pudding with the whipped cream and add a little bit of the crushed oreos (not too much though). Fill the cup about 3/4 of the way with this. Then add crushed oreos for the other 1/4 of the way. Then place worm(s) on top! Awesome for kids! :)

Buttermilk syrup

1 cup buttermilk
2 cups sugar
1/4 tsp baking powder

1/4 cup corn syrup
1 cup butter
Boil 5 min take off heat add tsp of vanilla

This is good on your usual pancakes waffles and French toast but also yummy to dip apples and bananas in and top your ice cream with

Squash Casserole

4-6 cups cubed squash (I used Zucchini and Yellow)
saute the moisture our of it (I used about 2 tbsp of butter)

Saute 1 cup of diced onion until opaque (transluscent)

Then combine squash and onions in a medium bowl with:
1/2 cup sour cream
1-1 1/2 cups longhorn cheese
1/4 tsp garlic
1/4 tsp pepper
1/2 tsp salt

Put in greased 13 x 9 pan

Sprinkle top with 1 roll of crushed Ritz type(butter) crackers and bake in 350 degree oven for 30 min.

I served this with chicken and rice.

Variation I tried: Added 1/2 cup to 1 cup green chili and about 1/2 cup more cheese.

Glitter Grapes..... by Lesley Talley

Glitter Grapes
1 pound green grapes
1 box jello (we did strawberry)
Remove grapes from stems and place in colander. Wash grapes. While grapes are still wet, roll in dry jello powder. Place in bowl and chill for a few hours or overnight. They turn out glittery and yummy! You can also place a few grapes and a sprinkle of jello at a time into a bag and shake, but it doesn't distribute the powder as evenly.

Sore throat winter tea!

Winter sore throat "tea". In a jar, combine lemon slices, organic honey and sliced ginger. Close jar and put it in the fridge, it will form into a "jelly". To serve: Spoon jelly into mug and pour boiling water over it. Store in fridge 2-3 months.

1 big can of whole tomatoes
3 green onions
3 jalepenos

1/2 a Vidalia onion or dehydrated onion
Tsp red chile flakes
Lawreys seasoning salt and black pepper to taste....

8 quarts of popped popcorn
2 cups brown sugar
1/2 cup white karo
...
2 cubes (sticks) of butter**I use 1 cube of butter and it works just fine
1/2 tsp. salt

Boil the above ingredients 3 to 5 minutes or until it changes color and gets thick at the bottom of the pan. Remove from heat and stir in:
1/2 tsp. baking soda
1 tsp. vanilla extract
Pour over popcorn mixing until all of it is coated. Lay to cool on wax paper 5 to 10 minutes. Store in air~tight container. Mmmmmmm!

Chocolate Cobbler......... Verlene Anderson

1 cup self-rising flour

3/4 cup sugar
1 1/2 tablespoon cocoa
1/2 cup milk
1 teaspoon vanilla

Combine flour, sugar, cocoa, milk and vanilla. Melt 1 stick margarine in 9x13" pan. Pour batter over butter but do not mix. Take 1 cup sugar and 1/4 cup cocoa and sprinkle over batter but do not mix. Pour 1 1/2 cups boiling water over batter, but do not mix. Bake at 350 degrees for 30 minutes.

Oreo Truffles
1 pack of Oreo Cookies
1 8oz Cream Cheese
White Chocolate Almond Bark
Put the Oreos in a food processor or blender till finely chopped. Then pour into a mixing bowl and add the cream cheese. Blend together
Roll mixture in to balls (any size you would like) place on wax paper. Chill for 30min Melt chocolate and dip the balls and place back on wax paper till Chocolate hardens. Then enjoy!!
They also freeze really good

I've thought about what my comfort food is all day and just can't get past strawberry Dr.pepper from sonic!!!!! But I also love ice cream Sundays!!! So here it is....get as much vanilla icecream as u can fit into your bowl, smother it in caramel and chocolate....add the can of whip topping and add the cherries! Then u can smother it again in the chocolate and caramel ! Thats my kind of comfort! Oh wait I forgot the butterscotch .....

2 bags green Chile

Cut steaks into small cubes cook in large pot until all water is out. add oil and flour to make into paste mixture then add tomatoes which we cut into pieces and green Chile that is peeled and chopped along with water let simmer until it thickens. then enjoy with tortilla

Simple peanut butter cookies.
1 cup peanut butter
1 cup sugar
1 egg

Mix ingredients. Roll into balls, put on cookie sheet and press flat w fork. Bake 350 degrees until lightly browned

2 1/2 pounds Bartlett or Anjou pears (about 5)
2 1/2 pounds McIntosh or Gala apples (about 5)
1 cup packed dark-brown sugar
1/2 teaspoon coarse salt
1 cinnamon stick


Directions

1. Peel, quarter, and core pears and apples. In a food processor, finely grate fruit (in batches if necessary), then transfer to a 5- to 6-quart slow cooker. Stir in dark-brown sugar, salt, and cinnamon stick. Cover and cook on high, 4 hours.
2. Remove cinnamon stick and reserve. Transfer mixture to processor (in batches if necessary) and process until smooth. Return to slow cooker, along with cinnamon stick, and cook on high, uncovered, until mixture is thick and browned, 4 hours. Discard cinnamon stick and let mixture cool. Transfer to airtight containers and refrigerate, up to 3 weeks, or freeze, up to 3 months.

about 6 or 7 ripe bananas
Mix all together put in oven according to mix box. My husband takes this to work all the time and all the guys love it not dry banana bread it is super moist

1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup

Directions

Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Chicken Fried Steak...bu Deborah Perry

Saw this recipe on tv had to try it, my hubby loves Chicken fried steak. The liquid for dipping your steak in is butter milk, eggs, and regular milk. Flower mixture is flower salt pepper and meat tenderizer seasoning. Dip your steak in flower mixture, then milk mixture. then back in flower mix. Then put on a cookie sheet to rest in fridge for 30 min to an hour. This makes the most beautiful crust you have ever seen. Fry in enough hot oil to cover steak. Breading doesn't come off and is Delicious. I serve with salad, mashed potatoes and white gravy made from the left over flower mix. This is my hubbys favorite comfort food. He tells everyone a woman has to be able to make good gravy to be a good wife, lol

The other night I threw together a homemade pot pie!
1 can of cream of chicken
1/4 c. water
2 c. bit sized precooked chicken
1/2 package frozen vegis

1 package cresant rolls

I mixed all but the rolls together in a cassarole dish and cooked @ 375 for 20 mins. Then layed the cresant rolls over the top and cooked another 12 mins.

Me and my sister (accidentlly) ate the entire cassarole!

Chicken Noodle Soup: (simple)

4 boneless/skinless chicken breasts (Cooked and shredded)
1 package Noodles (I use the spiral kind)
Carrots chopped
...
Celery chopped
Salt
Pepper

Put celery, carrots, and chicken in a large pot and full with water. Bring to a boil and let boil for about 10 minutes to soften the carrots and celery. Then follow directions for the noodles. Add salt and pepper to taste.

1 c. nuts (optional)

cream first 7 ingredients together then add oats, flour, and baking soda. Mix together well, then add chocolate chips. Cook at 375 for 10 min.

German Potatoe Salad..by Margaret Peterson

German Potato Salad:
11/2 lb potatoes (6 to 8)
3 tbsp olive oil
3 slices bacon, chopped finely
2 tsp lemon juice
...
2 celery sticks, chopped
1 tsp Dusseldorf or German mustard (I use Dijon)
4 tbsp mayonnaise
2 tbsp fresh chopped chives
1 tsp fresh chopped dill
1 tbsp chopped fresh parsley
salt and pepper to taste

In pot of boiling salted water, cook potatoes for 20 minutes or until tender. Drain, allow to cool for 5 minutes, then slice thickly and set aside in a bowl.
While potatoes are cooking : 1 tbsp of oil in a frying pan and fry the bacon for 5 minutes, until crispy. Remove the bacon and set aside.
Stir in the rest of oil and lemon juice into the pan, then pour it over the sliced warm potatoes. Now add the celery, cucumber, bacon, salt and pepper and mix well.
In a small bowl, blend the mustard with the mayonnaise. Pour over the potatoes and toss to coat. Garnish and season with fresh herbs, salt and pepper to taste.
Serve immediately (traditionally this salad would also include 2 pickles chopped and added when you add the celery,etc. )

Chicken Pasta Salad....by Verlene Anderson

Chicken Pasta Salad

1 fryer (about 3 lb.) chicken
1 1/2 cup chopped celery
6 each hard-boiled eggs
...
1/2 pound shell macaroni
4 tablespoons pickle relish or diced pickles
1 cup Miracle Whip dressing
1/4 cup sugar
1 tablespoon mustard
2 teaspoons salt (to taste)

Stew chicken until tender (1 and 1/2 to 2 hours). Prepare macaroni according to package instructions. Dice celery, pickles, and eggs. Bone and chop up chicken into small bite size (1/2 inch or so). Combine chicken, macaroni, celery, pickles, and eggs in a large bowl. Mix Miracle Whip, sugar, mustard, and salt together until well blended. Pour over chicken mix. Toss until well mixed. For extra moisture, add 1/4 to 1/2 cup of milk

‎4 split chicken breasts (bone-in, skin-on)
Good olive oil
Kosher salt
Freshly ground black pepper
1/2 pound asparagus, ends removed, and cut in thirds diagonally
...
1 red bell pepper, cored and seeded
2 scallions (white and green parts), sliced diagonally
1 tablespoon white sesame seeds, toasted

For the dressing:
1/2 cup vegetable oil
1/4 cup good apple cider vinegar
3 tablespoons soy sauce
1 1/2 tablespoons dark sesame oil
1/2 tablespoon honey
1 clove garlic, minced
1/2 teaspoon peeled, grated fresh ginger
1/2 tablespoon sesame seeds, toasted
1/4 cup smooth peanut butter
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Directions

Preheat the oven to 350 degrees F.

Place the chicken breasts on a sheet pan and rub with the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and shred the chicken in large bite-sized pieces.

Blanch the asparagus in a pot of boiling salted water for 3 to 5 minutes until crisp-tender. Plunge into ice water to stop the cooking. Drain. Cut the peppers in strips about the size of the asparagus pieces. Combine the cut chicken, asparagus, and peppers in a large bowl.

Whisk together all of the ingredients for the dressing and pour over the chicken and vegetables. Add the scallions and sesame seeds and season to taste. Serve cold or at room temperature.

Coconut pudding, or haupia, is a traditional Hawaiian sweet usually cut into small squares. - I made this for a potluck. It turned out pretty good if you like coconut. *Doesn't keep, so has to be eaten the same day* -

2 cups coconut milk ( I suggest using the milk by silk etc, vs in the can...I made a batch using both, and the one in the can was super strong and didn't set as quickly)
3/4 cup sugar
6 tbsp cornstarch
...
1 tbsp vanilla
Sweetened flaked coconut (1/2 cup or more if you really like it)

1) Preheat oven to 325°. Spread flaked coconut on a baking sheet and bake until golden brown, 6 to 8 minutes.

2. Oil an 8-in.-square baking dish. In a small bowl, stir together 1/2 cup coconut milk and cornstarch until smooth.

3. In a medium nonstick saucepan, combine 1 1/2 cups coconut milk (if you don't have enough, augment with water) and sugar. Stir over medium heat until sugar has dissolved. Drizzle cornstarch mixture slowly into saucepan, whisking, and whisk in vanilla and salt. Cook, whisking vigorously (do not allow to boil), until mixture is very thick, pulling away from pan, and no longer tastes floury, 4 to 6 minutes. Pour into prepared dish and spread evenly. Let cool briefly, then cover with plastic wrap and chill until set, at least 1 hour (possibly longer).

4. Cut haupia into 22 to 24 triangles and sprinkle each with a pinch of toasted coconut

Leftover Grilled chicken breast (or many people use deli chicken slices)
Boiled Egg(s)
Bacon Bits
Cherry tomatoes

Grated cheese

Salad dressing of choice (ranch is awesome with this!)

Cut up chicken and eggs, throw the rest in, pour dressing to taste!! I used to just put all ingredients in a bowl to take to lunch and just cut up there and add dressing

Ok here is my fruit salad one.... I love these fruits exspecially while I am pregnant..

you have to buy
2 containers of stawberrys
1 watermelon

1 cantelope
1 honey dew melon
1 or 2 mangos
10 kiwis
4 red apples
4 greeen apples
1 pineapple
3-5 oranges
1 bag of green and red grapes
1 bag of seedless cherries
I love mixing it all together in a big bowl or i layer them inside the bowl
I buy 2 containers of Marshmellow Puff
1 8 oz of cream cheese
I mix the marshmellow and cream cheese together.
you can put whatever you want in a bowl or on a plate and I usually poor some of the dip over my fruit or i put it on the side to to dip it in... But it is so good I just ad to share..

1 jar Maraschino Cherries
1 can Pineapple Chunks
1 can Mandarin Oranges

6-7 oz Sour Cream

Drain the fruits and chop them all in half. Pour them into a large bowl and mix together. Stir in marshmallows. Then mix in the sour cream and walnuts. Serve chilled

Cold Cucumber Salad (4 servings)

2 cucumbers
1 teaspoon kosher salt
...
1 teaspoon white vinegar
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped fresh dill
Freshly ground black pepper
Directions
Peel and slice the cucumbers and put them in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 30 minutes. Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage. Add the mayonnaise, sour cream, dill and pepper, and mix well. Cover and refrigerate until serving time.

Simple Potatoe Salad... By Stormi Clonts

Simple Potato Salad

5-10 potatoes
5-10 eggs (I do 1 egg per 1 potato)
Sweet or Dill relish (I use dill)
...
Sliced black olives (Optional)
Chopped Onions (Optional)
Mayo
Mustard
Seasoning (salt and peper is what I use)

Peel (optional) and cube your potatoes. Boil in water until you can easily stick a fork through. (Not too easy though, you don't want mashed potatoes)

Boil eggs for about 15 minutes. Peel, rinse, and chop.

In large bowl add potatoes, eggs, relish to taste, seasonings, olives, onions, mayo (taste/texture), and mustard (taste/texture). Stir well.

Place in fridge for a few hours to cool. Then serve :)

My Creed

When I first made my couponing blog or page I figured a few people would join...... I never ever thought i would have as many awesome women following as I do. And I love to share deals with you all the time and chatter your ear off about coupons.....

But I have other tabs in my life to also talk and chatter your ear off about........

I am a wife; and by golly it's the third hardest job in the world to be..... do you realize that? You have to LOVE someone who can repeatedly get on your nerves? I love my William... I do but if there is one thing that man knows how to do it's bug the crap outta me...... its with small things to like picking up his dirty clothes and putting them in the hamper or seriously i thought I had him trained in the whole toilet set department....grrrr!!!  But one thing that man has taught me how to do... right is LOVE him...... I do I honestly love him and I love God more because of it. But God he is my first LOVE always will be, how can a marriage work if God isn't the headship of it all? It boggles my mind when I hear and see how married couples act or talk about one another.... guess I am old folk, seriously.  One day I saw this couple with their kids, ... yes I am a couple watcher.. stick with me here.... she just went and served herself before her husband and her kids I was in SHOCK I was.... i know that's not hoe everyone was raised and keep in mind side note I was raised by my very strict Hispanic grandparents which = old school me...

      In my home the husband and children are served first NO MATTER how hungry I am  that's just the way it goes.... Doesn't the word of God say wives SUBMIT to your husbands? People and their " I don take my vows seriously attitudes" which leaves the world populated with divorces broken hearts and broken homes.... I better stop and step down from my soap box..

I am a mother ...second hardest job to me..... responsibilities never ending neither will the complaints of boys children about both children... But I remember back to when I wasn't a mom how boring my life really was seriously.....when all I cared about was myself.....ugh! How empty of a vessel I was..... and then Aidan my Aidypop I call him was born......first emotion to hit me was I cried just as much as he did..........then Gabriel came a few years later... did the same thing.... they still can bring me to tears with either their awesome heart or their awful attitudes... either way I have an un dieing love for them that will never quit...


 Now my first hardest job in all seriousness is to be a woman of God. It is it's hard I won't lie.... You get attacked in every direction whether it be by friends, family, finances anything its a daily struggles to say for me I trust you Lord... or whatever your will is. And at all 3 of these jobs I CANT.... I CHOOSE not to fail. I have been ridiculed all my life for being a Christian and now I could CARELESS what you think of me and what relationship/ religion I am. Because your thoughts and judgments don't matter to me as long as I am pleasing my God and my home and my family those are the ones that matter....... Why in the world would or should I hide the fact that I am a Christian when Jesus himself didnt' hide from the cross?

    I have failed baldy.... shoot I continue to fail and theres the devil right there to let me know about it too, I am in no way near nor will I never be perfect, But I know Gods love and forgiveness is. I LOVE GOD I DO I WILL SERVE HIM FOR ALL ETERNITY,,,,, No shame in saying it either, even if now the devil is taunting me with "But what about people on your page what if they find out" Well then you do....... you can take me or leave me but in the end I still have my God..... take this whole world but Leave me Jesus!!!


Now I know this has nothing to do with being frugal or couponing but this has to do with living and isn't that what my page is called? Couponing. shopping AND LIVING?

I know I just rambled on and on but it felt good to for once talk about my other part of life then deals, sales, coupons and being frugal....

So like Pastor Melinda said Sunday......

Pork Chops with Blue Cheese Gravy

Pork Chops with Blue Cheese Gravy

4 Servings, Prep Time: 5 Minutes, Cook Time: 30 Minutes

This recipe makes the most delicious creamy gravy to serve over pork chops. It tastes like something from a fancy restaurant. Serve with sauteed mushrooms, if desired

Ingredients

2 tablespoons butter
4 thick cut pork chops
1/2 teaspoon ground black pepper, or to taste
1/2 teaspoon garlic powder, or to taste
1 cup whipping cream
2 ounces blue cheese, crumbled
Directions

Melt butter in a large skillet, over medium heat. Season the pork chops with black pepper and garlic powder. Fry the chops in butter until no longer pink and the juices run clear, about 20 to 25 minutes. Turn occasionally to brown evenly.
Remove chops to a plate and keep warm. Stir the whipping cream into the skillet, loosening any bits of meat stuck to the bottom. Stir in blue cheese. Cook, stirring constantly until sauce thickens, about 5 minutes. Pour sauce over warm pork chops.

Pineapple Cake

pineapple cake
2c flour
2 eggs
2c sugar
2t soda
...
1 large can pineapple with juice
1t vanilla
stir all together pour in a 9 x 13 pan bake 350 for 40 to 45 min
frosting 1 stick butter soften 1 6oz cream cheese 1t vanilla 2c powdered sugar 1c nuts
put on cake while still hot then put in frig to keep cool

BIsquick Cobbler

Bisquick cobbler
2tbsp. butter
1/2 c. bisquick
1/2 c. sugar
1/2 c. milk
...
3 c. of cut of peaches or other fruit( can be fresh, frozen thawed, or canned!
Turn oven to 375... melt your butter in baking dish. Mix bisquick, sugar, and milk. Pour over melted butter. Spooon fruit over. If using canned peaches, pour on some of the juice also. Bake at 375 for 30 min... or when brown on top. Can double the recipe.!!
Always use this to make my cobbler....Comes out really good!!! Add some vanilla ice cream to it!!

broccoli cheese casserole....1c. raw rice 2 10 oz pkg.chopped frozen broccoli or 1 stalk of the fresh chopped 8oz cheese whiz 1can cream of mushroom soup... cook rice in water as usual cook broccoli
boil melt cheese and soup together mix with rice and broccoli place in 9x13 pan bake 350 for 30 min .......there is my real one all tho i thought the others were pretty good too

48 HERSHEY'S KISSES Brand Milk Chocolates 1/2 cup shortening 3/4 cup REESE'S Creamy Peanut Butter 1/3 cup granulated sugar 1/3 cup packed light brown sugar 1 egg 2 tablespoons milk 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt Granulated sugar

Directions

1 Heat oven to 375°F. Remove wrappers from chocolates.

2 Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

3 Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.

4 Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely

Gilled Citrus Jalapeno Chicken .....by Shirlene John

Grilled Citrus Jalapeño Chicken.......

4 to 6 chicken breast
1 orange
1 lemon
...
1 lime
1/2 red onion
2 cloves garlic
1/3 c. Olive oil
2 jalapeño
1 gallon sz ziplock bag
Salt and pepper

In gallon sz bag add juice from orange, lemon and lime add zest from all 3 dice onion garlic and jalapeño, add oil an salt and pepper mix well place chicken in bag a marinate several better if u marinate several hours our over nite.... Grill chicken serve with rice, pasta or veges.... Very yummy

Calvacitas.......

This is a healthy side dish. I dont know how to spell the name that we call it cuz its in Spanish..let me try "CAVALACITAS" 3squash,3zucchini,2tomatoes,1/2 of a onion, 1can green chilli,1can corn.
Put butter in pan sautee squash and zucchini add all off other items. when done top with cheese.

Columbian Beef and Rice

Columbian Beef and rice
1-1/2 lbs sirloin tip steak, sliced very thin
salt to taste
garlic powder to taste
cumin to taste

4 tsp olive oil

1 medium onion, sliced thin or chopped
1 very large tomato or 2 medium tomatoes, sliced thin or chopped
In a hot skillet put in 2 tsp of oil add the steak strips that you have seasoned with salt, garlic powder, cumin to your taste. Cook only about 1 min on each side.
Remove from pan.
Turn the heat to medium. Now add 2tsp of oil and put the onions in the pan. Let them cook in the juice of the meat/oil for about 1 minutes. Then add the tomato slices. Add salt, garlic powder and cumin to taste to the veggies. Cook for 1 min.
Add about 1/4 cup of water and simmer a few minutes to create a sauce, add more water if needed and taste adjust seasoning as needed. Return the steak to the pan along with the drippings, combine well and remove from heat.
Serve over rice, or noodles or as a side with salad

Honey Pecan cutlets..

Cooking Time: 15 min
Ingredients

1 pound boneless pork loin cutlets, pounded to 1/4-inch thickness
Flour for dredging
3 tablespoons butter
1/4 cup honey
1/4 cup chopped pecans
Instructions
Dredge cutlets in flour, shaking off excess.

In a heavy skillet over medium heat, heat 1 tablespoon butter . Add cutlets and saute until brown on both sides, 5 to 6 minutes.

Soften the remaining butter and mix it with the honey and pecans; add to skillet and stir gently. Cover and simmer gently 7 to 8 minutes.

Remove cutlets to a serving platter, and spoon any remaining sauce and pecans over them.

Tostada Casserole

1 Bag Fritos Corn Chips
1 lb. ground beef
1 package taco seasoning
...
1 large can refried beans
garlic powder to taste
salt and pepper
1 lg can tomato sauce
cheese
1/4 c. water

Brown ground beef and add taco seasoning and 1/4 cup water. Add refried beans and cook till boiling. Add tomato sauce, garlic, salt, and pepper. Put fritos on bottom of 9/13 baking dish and put the ground beef mixture on top and spread to even. cover top with cheese and bake 10-15 mins. or until cheese is melted and slightly brown. Serve with chopped tomato and lettuce.

Chili Mac

Ingredients
1 pound Brussels sprouts
1 cup (low-sodium) chicken broth
3/4 cup Parmesan cheese
Pepper to taste

Directions
1) Cut Brussels sprouts in half. Remove any leaves/stems that look bad.
2) Spray pan with non-stick spray and sautee sprouts flat side down for 1-2 minutes.
3) Add 1 cup of Low Sodium Chicken Broth (I use No Sodium Bouillon), turn to medium heat and simmer for about 4-5 minutes. Broth should be mostly gone, and sprouts tender.
4) Serve, and sprinkle Parmesan cheese over the top, and pepper to taste (I don't use any personally)

1 package bacon
1 box stuffing mix any flavor
preheat oven to 375 degrees

make stuffing according to directions on box

Boneless skinless chicken breasts
BBQ potato chips
grease a cookie sheet with cooking spray
crumble chips
rinse chicken off and pat dry then roll in chips put on cookie sheet and THEN turn oven on to bake for for 30 minutes or so until juices run clear when pierce with fork. You can also use cheese nip crackers for the crust possibilities are endless!

Cream of mushroom

Lays potato chips (optional)(Crumble the bag up)
Shredded cheese

Pre-heat your oven to 400.

Cook your noodles then drain. Stir in the cream of mushroom and chicken/tuna. Warm it up a little.

Put mixture in a casserole. Spread the crumbled chips on top and cover with cheese. Stick in the oven till the cheese is melted.

Then it's done!

OR if you're lazy like I am. Just stir in EVERYTHING after you drain the noodles and warm it up. Then it's done. No oven required for this way lol

Boil thin spagethii ( sp) noodles till done.. Cube and cook Chicken pieces.. and broccolli .. add peanuts and seasame dressing to chicken and broccolli and stir fry it then add to noodles topped with peanuts..
