Cowboy Caviar.......by Shirlene John

Cowboy Caviar

2 cans black eyed peas (rinsed/drained)
1 can black beans (rinsed/drained)
1 can kidney beans (rinsed/drained)
...
1 or 2 cans diced tomato (rinsed/drained or can used fresh)
2 cups frozen corn (thawed)
4-6 green onions sliced
Cilantro to taste (I like lots)
1 cup zesty Italian dressing
Juice from 1-2 limes
Cracked pepper and garlic salt to taste
Mix altogether let chill for a few hours or over night, serve with tortilla chips and enjoy....
* can add avocados prior to serving
