Chicken Fried Steak .......by Chelsea Nelson

Chicken Fried Steak

Ingredients:
2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
...
1 teaspoon freshly ground black pepper
1 cup all-purpose flour
3 whole eggs, beaten
1/4 cup vegetable oil
2 cups chicken broth
1/2 cup whole milk
1/2 teaspoon fresh thyme leaves

Directions:
1) Preheat oven to 250 degrees F.
2) Cut meat with grain into 1/2-inch thick slices. Season each piece on both sides with salt and pepper. Place flour into a pie pan. Place eggs into a separate pie pan. Dredge meat on both sides in flour. Tenderize meat, using a jaccard type tenderizer, until each slice is 1/4-inch thick. Once tenderized, dredge meat again in flour, followed by egg and finally in flour again. Repeat with all pieces of meat. Place meat onto a plate and allow it to sit for 10 to 15 minutes before cooking.
3) Use enough vegetable oil to cover bottom of a 12-inch skillet and set over medium-high heat. When oil begins to shimmer, add meat in batches, being careful not to overcrowd pan. Cook each piece on both sides until golden brown, approximately 4 minutes per side. Remove steaks to a wire rack set in a baking pan and place in oven. Repeat until all meat is browned.
4) Add remaining vegetable oil, or at least 1 tablespoon, to skillet. Whisk in 3 tablespoons of flour left over from dredging. Add chicken broth and whisk until gravy comes to a boil and begins to thicken. Add milk and thyme and whisk until gravy coats a spoon, approximately 5 to 10 minutes. Season to taste, with more salt and pepper, if needed. Serve the gravy over steaks.

Strawberry Cream Cake......by Kristi Johnson

Strawberry Cream Cake

Ingredients
2 pkg white cake make according to pkg directions or use your favorite recipe
1 cup salted butter softened
...
1 32 oz pkg powdered sugar
1 1/2 cup finely chopped strawberries
1/2 cup seedless strawberry jam
fresh strawberries to top on cake

Instructions
Bake your white cake in two round pans according to directions and allow to cool. You may want to stick your rounds in the freezer for an hour so it's easier to frost.
For FROSTING: Beat butter until smooth in large bowl. Slowly add about 1/2 of the powdered sugar. Then add the strawberries and mix on low speed. Continue to add the rest of the powdered sugar until you get a smooth consistancy. If it looks too thick add more strawberries. If it's too thin add more powdered sugar.
Once the cakes are cooled spread jam over the first layer. Then add a layer of frosting. You could add a layer of thin strawberries here too. Then carefully add your second layer of cake. Add more frosting to fill in the gaps. Then frost the entire cake.

A Masterpeice .......by Billie Starner-Capps

The other day I just threw together a meal. No recipe, but the family raved about it and I had nothing left over! LOL

I had some boneless skinless chicken breasts and I seared them in a skillet, then cooked them thoroughly.

While the chicken was cooking, I diced up some celery, onion, banana peppers, sweet peppers, green peppers and I sauteed that. Then I added two cups of rice and browned it. I coated the sauteed veggies and rice with about a half a cup of flour, and then added five cups of water. Usually it calls for four cups of water per two cups of rice, but I added extra water to give my rice a gravy effect. I seasoned with lemon pepper, salt, garlic to taste.
...

I diced up two of the chicken breasts as the rice cooked. When the rice was done I added the chicken breasts, a half a cup of Parmesan cheese, and topped off with shredded fiesta blend cheese.

You know it's good when the family licks their plate clean! :)

Homemade Chicken Soup.....by Briana Morales

homeade chicken soup ... 4/5 chicken breasts boil until done keep the juice drain the nasty stuff though if you have chicken with skin. Cut as many carrots you like :) same with potatoes I like to add cabbage and celery in mine ... It's yummy and very easy ;)

Pasties...... by Jennifer Sabin

Meat (Chicken, Beef, PorK, deer, elk, etc.) - 2 lbs. small cubed
7 -10 potatoes, cubed
7- 10 carrots, 1/2" to 1" slices
...
5-6 stalks celery, 1/2" to 1" slices
1 large onion, large diced

Spices you like, I used pepper, garlic, pinch of salt.

1-2 stickes of butter, divided by tablespoons

1. Cube meat, set aside.

2. Cube vegetables, combine in large bowl. Add spices and stir to coat veggies.

3. Make pies crust or use refigerated pies crusts. Roll out crust for a pie. Layer on 1/2 of pies crust, meat (enought for a serving), veggies ( I over fill a little), put a piece of butter on top and fold pie crust over to make a half moon shape. Pinch crust together to seal.

4. Place on cookie sheet and bake at 350 degrees for about and hour.

Pie Crust recipe I used:

1 1/2 cups flour
1/2 tsp. salt
1/2 cup shortening (I used lard)
4-5 tsps. cold water

Mix flour and salt in mixing bowl, cut in shortening until it resembles small peas. Sprinkle in water by the tsp. and mix after adding each tsp. Makes a stiff dough. Divide in half. Makes two crusts. Can make crusts ahead and wrap in plastic wrap to keep moist.

I usually freeze some of these for easy fast meals. Not this weekend though:)

2 t. Lemon Zest
1/8 t. Salt
3 c. Flour
1/2 t. Baking Soda
Red Food Dye
Yellow Food Dye
1/2 c. Granulated Sugar (for dusting)

Combine butter and sugar in a large bowl; beat at medium speed until creamy. Add egg, lemon juice, lemon zest, and salt. Continue beating until well mixed. Add flour and baking soda, beat until well mixed. Divide dough into thirds. Press one-third of the white dough evenly into the bottom of a loaf pan that you have lined with foil, wax, or parchment paper. Place another one-third of the dough into a bowl and add yellow and red food dye to make orange (refer to the chart on the back of your box). Once it is mixed evenly, press orange dough evenly over white dough. In another bowl, add the final amount of dough and dye yellow. Press that evenly over the orange dough. Cover and refrigerate until firm (2 hours or overnight is best). Once chilled, invert your loaf pan and unwrap your dough. Flip it back over and place it on a cutting board. Cut loaf crosswise into 1/4-inch slices using a sharp knife, trimming edges to make even, if necessary. Cut each slice into 6 wedges. Place 1-inch apart onto a lightly greased cookie sheet. Bake for 7-10 minutes in a pre-heated 375 degree oven. Place cookies straight into a bowl with sugar and coat. Place coated cookies on a baking rack to cool
